Fajitos
This dish does not have the only one correct recipe; you will find various recipes in every cafe or restaurant. More precisely, the recipe, of course, is one, but the fillings can be very different. The main ingredients in the fajitos dish are tortilla, sliced into strips and grilled meat and vegetables, sauce (you can serve sour cream, white yogurt, guacamole, salsa, pico de Gallo, as well as cheese and tomato sauce). There are a wide variety of filling options, so vegetarian fajitos can be prepared by replacing meat with vegetables and mushrooms.
Fajitos can easily be confused with burritos. The fact is that both of these dishes consist of tortilla, meat and vegetables. The main difference between these dishes is that the burrito is served in a completely ready-to-eat form, that is, the filling is already carefully wrapped in tortilla. Fajitos, on the contrary, is served in unassembled form, separately tortillas and separately meat and vegetables, as well as several sauces, so that everyone can build their own fajitos to taste and add only those ingredients that really like.
In addition, sliced meat is usually not added to the burrito, most often minced meat is placed in it, seasoned with cheese, beans and vegetables, while in fajitos the meat should only be cut into thin strips and certainly grilled.
Recipe
Step 1:
Slice chicken fillet, grate the zest of one lemon on top, squeeze the juice from the same lemon and add it to the meat, add 2 tsp of cinnamon, 2 tsp brown sugar, 2 tsp paprika, oregano and cumin, as well as a little salt and 2 tsp. olive oil. Marinate chicken fillet in this composition for 1-1.5 hours.Step 2:
Prepare the sauces. Guacamole: peel the ripe avocado, remove the stone and slice, pour it with the ltmon juice, add a garlic clove, 2 tbsp. oil and a bunch of cilantro. Grind in blender. Pico de gallo: slice the tomatoes and chili pepper, add lemon juice, chopped cilantro, 2-3 chopped chopped garlic cloves and salt. Sauces are ready.Step 3:
Now peel the onion and cut it into half rings, peel the seeds and cut into strips. Fry the chicken fillet in a grill pan, then add vegetables to it and continue to fry until the vegetables are prepared. But at the same time, you need to prevent them from becoming soft, vegetables should remain crispy.Step 4:
Serve tortilla, sauces in deep bowls, and fillings for fajitos on a large flat dish.
